After building a presence in South Jersey over the past year, popular chicken finger chain Raising Cane’s is expanding to other parts of the state.
Scheduled to open Dec. 9 at 1031 Route 1 in Edison, the restaurant will be the fast-casual brand’s debut site in Central Jersey.
Festivities will include food giveaways, community donations and other surprises. Details on the opening day’s timeline were not immediately available.
“As part of Raising Cane’s commitment to the Communities it serves, the new Edison Restaurant will engage with local schools, sports teams and non-profit organizations through fundraising opportunities and sponsorships,” a media representative said.
In the town, Raising Cane’s took over a property that was formerly a bank at the Edison Crossroads shopping center. The new 3,300-square-foot restaurant includes two drive-thru lanes, indoor dining and patio seating.

Additionally, Raising Cane’s is targeting a “late winter/early spring 2026” grand opening of its first North Jersey restaurant, the spokesperson told NJBIZ.
Located at 643 Route 46 in Fairfield, Raising Cane’s is building a 3,300-square-foot drive-thru restaurant at the site of a former Houlihan’s.

Founded in 1996, Raising Cane’s serves chicken fingers, crinkle-cut fries, Texas toast, coleslaw and signature “Cane’s Sauce.” With more than 900 locations nationwide, the Louisiana-based chain is considered one of the fastest-growing restaurant brands in the U.S.
To reach its goal of 1,600 restaurants nationwide in coming years, Raising Cane’s opened 118 new locations in 2024 and expects to add nearly 100 more in 2025.
Since opening its first New Jersey location last year in Burlington, Raising Cane’s has added outposts in Washington Township, Marlton, Cherry Hill, Deptford and Glassboro.
After Edison and Fairfield, the chain expects to unveil its first Jersey Shore location by late 2026 at Brick Plaza in Brick.
